Emblem of our Jura Mountains, Comté is one of the treasures of our region. It is made in the fruitières. But do you know where this term “fruitière” comes from?
A dairy symbolizes the fruit of the work of farmers who pool their milk production, the work of the cheesemaker who transforms milk into cheese, and that of the refiner in his cellars who patiently works each wheel to enhance its aromas.
It takes about 450 liters of milk to produce a wheel which will weigh about 40 kilos.
You won't be able to leave the region without buying a piece of this cheese, it's so good! Sweet, fruity, or old, there is for every taste !

Of course, you won't be able to leave the region without buying the famous cheese! You can also bring back some cancoillotte, morber, mount of gold (when it's the period...), of the Morteau sausage… In short, only good products from our region!!
Want to visit a fruit farm?
In our country, only one comté cheese dairy organizes tours. It is the Fruitière à comté de Passavant Chazot.
Visits are free and take place:
- Wednesdays in June and September
- Wednesdays and Fridays at 9 a.m. in July and August (registration required at the Tourist Office)

The quince paste are another tradition that continues among the pastry chefs and confectioners of Baume les DamesThey have a particular shape, similar to glasses, and tell us an unusual story !
The story goes back to the 14th century, when Sibilette de Vaire was an abbess. She was not only an abbess at Baume les Dames, but also in Remiremont in the Vosges. It therefore displayed a double crosier, showing its belonging to two monasteries.
One day Sibilette de Vaire had a falling out with her superior who refused to give her money to undertake work in the abbey. It is said that she was so irritated that she hit him on the head with her rifle butt! As an apology (or as a provocation?!). The story goes that on each anniversary of the argument between Sibilette de Vaire and her superior, Sibilette took great pleasure in offering a ballotin of quince paste to her superior (either to apologize or to taunt him...). And these quince pastes were shaped like a double cross.

Simple golden and crispy yeast dough in the shape of an 8, the cracker originates from a old legend.
Saint Martin, passing one day in Baume, tied his donkey to the gate of the monastery and went in to refresh himself. The donkey, finding the time long, escaped. Saint Martin asked the population for help in looking for his donkey. People blew into horns and watering cans to imitate the braying of the donkey, which finally responded. He was brought back into the streets of the city, followed by a troop of children who happily filled their pockets of droppings that the donkey dropped on his path. According to this folk tale, Saint Martin, out of gratitude, is said to have transformed the droppings into crackers..
